A gussied-up version of a traditional chocolate chip cookie, these cookies incude rich, tender shortbread combined with semi-sweet chocolate chips and topped with a dusting of powdered sugar.

When I first got the idea to start a blog to share cherished family recipes, I knew this one had to be first. I love when I walk in the door at my parents’ house and my mom lets me know she has made my “special cookies.” These buttery bites of chocolate chip shortbread bliss are the most-requested cookies from my mom Carol’s recipe box and the only cookie I simply cannot resist!

My mom has been baking these cookies for more than 25 years. They show up at grad parties, family celebrations, holidays and on the dozens of “treat trays” that she delivers all around her small town to friends and family who need a little pick-me-up.

One of the best parts? These melt-in-your-mouth cookies are so easy to make with only a handful of ingredients. Even better? Making a double batch so you have plenty for yourself and to share with a friend.

A gussied-up version of a traditional chocolate chip cookie, these cookies include rich, tender shortbread combined with semi-sweet chocolate chips and topped with a dusting of powdered sugar.

Ingredients

  • 2 cups Butter
  • 2 cups Powdered Sugar
  • 2 teaspoons Vanilla Extract
  • 1/2 teaspoon Salt
  • 4 1/2 cups Flour
  • 12 oz Semi Sweet Chocolate Chips

Method

  • 1)

    Preheat oven to 350 degrees F.

  • 2)

    Cream butter and powdered sugar.

  • 3)

    Beat in vanilla and salt.

  • 4)

    Stir in flour and chocolate chips.

  • 5)

    Shape the dough into balls and flatten slightly with a fork.

  • 6)

    Bake for 15 minutes on an ungreased cookie sheet.

  • 7)

    Remove to rack. While cookies are warm, sprinkle lightly with sifted powdered sugar.
